Lambic beers are incredibly distinctive, and rooted in history. They are fermented by spontaneous fermentation – natural wild yeasts enter the sweetened wort from the atmosphere, and fermentation takes place in nature’s own time. They are then aged in oak -  for up to three years – and blended to give different lambic styles. Sour flavours are predominant – though these beers are just so incredibly (and deliciously) complex. Timmermans is one of a small number of authentic lambic brewers, leading the reinvigoration of this style by brewing a range of lambic style beers in Brussels. Their range of lambic beers and lambic fruit beers are second to none.

Timmermans Tradition Gueuze | 6.0% a.b.v. | Belgium

Timmermans Tradition Gueuze is a blend of young (less than one year old) lambic and older (two to three year old lambic). Sour champagne, hints of vanilla and subtle sour apple are in evidence on the nose.  On the palate, Timmermans Gueuze is tongue puckeringly sour, with the vanilla from the oak in evidence in the background, and sour fruits also coming through. Incredibly refreshing – in the manner of traditional sour lemonade.
