Lambic beers are incredibly distinctive, and rooted in history. They are fermented by spontaneous fermentation – natural wild yeasts enter the sweetened wort from the atmosphere, and fermentation takes place in nature’s own time. They are then aged in oak -  for up to three years – and blended to give different lambic styles. Sour flavours are predominant – though these beers are just so incredibly (and deliciously) complex. Timmermans is one of a small number of authentic lambic brewers, leading the reinvigoration of this style by brewing a range of lambic style beers in Brussels. Their range of lambic beers and lambic fruit beers are second to none.

Timmermans Tradition Faro | 6.0% a.b.v. | Belgium

Timmermans Tradition Faro is lambic that has been sweetened with cane sugar and candi sugar. Aromas of grain, apple and sour apple are in evidence. The taste is sweet and sour – but complex.  Lambic sourness is balanced by cane / candy sugar sweetness. Pear drops, sour green apple, fresh pressed apple juice, citrus lemon, sour cola cube sweets and smooth champagne vanilla notes are all present.  There is a complete absence of bitterness in the beer – it is replaced by sourness, making this beer quite distinct from other beers.
